Mushroom and Tomato Penne

A quick and easy dinner for those lazy nights…

Mushroom and Tomato Penne Pasta

1 box whole grain penne pasta
1 package of grape tomatoes
1 package mushrooms
2 cloves garlic
1 shallot
olive oil


1. Start boiling pasta water. Cook pasta as usual.

2. Saute garlic and shallots in olive oil.

3. After a few minutes, add mushrooms and grape tomatoes. Add salt and pepper to taste.

4. Once veggies are cooked, add to cooked pasta.

5. Shred some parmesan over each pasta bowl.
